REFRESHING SALMON SALAD
1. Ingredients:
Salad Ingredients:
- 2 salmon fillets (approx. 300 g) – flash frozen or sushi grade
- 2 cucumbers
- ½ lemon
Dressing ingredients:
- 1 avocado
- 2 lemons
- 2 tbsp olive oil
- 1 tsp. of salt
- 2 tbsp peppermint leaves
To serve:
- 1 tbsp toasted sesame seeds
- 1 tbsp chopped chives
2. Preparation:
- Cut two portions of filet salmon into thin slices and season with the juice of half a lemon.
- In a food processor mix 1 avocado, lemon juice, olive oil, salt and pepper. Blend into a smooth green dressing.
- Peel 2 cucumbers and cut them in thin slices.
- Arrange the slices of cucumber and salmon on two plates and pour the avocado vinaigrette on top. Sprinkle chopped chives and toasted sesame seeds and it’s done!
