REFRESHING SALMON SALAD

1. Ingredients:

Salad Ingredients:

  • 2 salmon fillets (approx. 300 g) – flash frozen or sushi grade
  • 2 cucumbers
  • ½ lemon

Dressing ingredients:

  • 1 avocado
  • 2 lemons
  • 2 tbsp olive oil
  • 1 tsp. of salt
  • 2 tbsp peppermint leaves

To serve:

  • 1 tbsp toasted sesame seeds
  • 1 tbsp chopped chives

2. Preparation:

  1. Cut two portions of filet salmon into thin slices and season with the juice of half a lemon.
  2. In a food processor mix 1 avocado, lemon juice, olive oil, salt and pepper. Blend into a smooth green dressing.
  3. Peel 2 cucumbers and cut them in thin slices.
  4. Arrange the slices of cucumber and salmon on two plates and pour the avocado vinaigrette on top. Sprinkle chopped chives and toasted sesame seeds and it’s done!
