BURGER STUFFED WITH GRILLED EGGPLANT, HALLOUMI CHEESE, FRESH TOMATO SALAD AND SPICY MAYONNAISE

1. Ingredients:

– 4 brioche buns
– 1 or 2 eggplant, cut into thick slices
– Olive oil
– Salt and pepper
– Merquén or paprika

For the fresh salad

– Sliced ​​cherry tomato
– Stemless mint
– ½ red onion
– Red wine vinegar
– Olive oil

Toppings

– 250 gr of halloumi cheese cut into strips
– Mayonnaise mixed with a handful of fresh arugula

2. Preparation:

Preheat the oven at 230 C. 

Prepare a baking sheet with parchment paper. In a bowl mix the aubergines with olive oil, salt, pepper and merquén or paprika. Bake for 20 to 25 minutes or until soft and golden. Reserve.

Meanwhile, in a bowl, mix the sauce by adding all its ingredients, stir well and set aside.

In a pan add a little olive oil and brown the halloumi cheese for a couple of minutes or until golden on both sides.

Brown each brioche bread cut in half in the pan where the halloumi was cooked, until golden brown. Assemble by putting a little of the arugula mayonnaise, the roasted aubergines, the halloumi cheese and the fresh tomato and mint salad on the bottom.

Serve with a little more sauce.
